Summer Calamari Salad with a Little Kick

There's nothing better on a hot summers day than an awesome Calamari salad with a little kick!

Preparation time:
 10 minutes

Cooking time: 15 minutes 



7 - 10oz (200 - 300g) calamari, sliced into long pieces

2 teaspoon chilli flakes (optional)

2 cup organic baby kale, spinach or rocket

1 small red onion, chopped

10 kalamata olives

2 lemon 

Handful of fresh mint, chopped

2 tablespoon extra virgin olive oil


Mix the kale, red onion, kalamata olives, mint, juice from ¼ of the lemon, 1 teaspoon of oil, season with salt and pepper. In a separate bowl coat the calamari with juice from ½ of the lemon and the chilli flakes. 

Heat a pan to medium-high, adding the calamari, sizzle for 1-2 minutes (until the edges begin to curl). Once cooked, transfer the calamari to the salad, top with an extra squeeze of lemon (optional). Serve immediately.
